Tomato Chutney is a versatile condiment that is delicious with both Indian and non-Indian dishes. We love it with chicken and rice, but it's also a great dipping sauce for grilled cheese or drizzled on roasted veggies. Fresh, in-season tomatoes are best, but if they're not available, we recommend using organic cherry tomatoes for the best flavor.
INGREDIENTS
2 tsp. ghee or neutral oil
1 lb. tomatoes, chopped
1/2 tsp. Down the Road Spice Co. Garam Masala
1/4 tsp. kosher salt
1 tsp. honey
1/2 tsp. red chili powder, such as cayenne
PREPARATION
1. Heat ghee or oil in pan on medium heat.
2. Add tomatoes, Garam Masala, salt, honey and red chili powder. Stir to combine.
3. Bring to a boil and reduce to a simmer. Cover and simmer for 5 minutes, until tomatoes are well cooked down and saucy.
4. Remove from heat and let cool. Once cool, transfer to blender or use an immersion blender to puree.
5. Serve and enjoy!
